My favorite headphones are earphones. The Sony active behind the head ones are my favorite. They combine the comfort of an earphone with great sound because of a bud-like piece. Easy my favorite.
The general rule of thumb for me and headphones is if they look stylish, they probably are garbage. Both the Beats by Dre and Skullcandy along with some other companys that are the "in" brands generally have highish prices with piss poor components. If they are cheap and stylish you can definently assume they are ☺☺☺☺ cause it all went to the style and not the components.(Although the Auravana Air's are beautiful pieces)

For gaming: I went with Plantronics Gamecom 377. I looked for a bang-for-your-buck set headset that offered good sound, mic quality and build quality for not too much money. Reviews seemed to indicate this might be the ticket, and I've been very pleased.
For all other applications I use a pair of Sennheiser in-ear headphones, so n/a for this thread. However, I've been impressed enough by those Sennheisers that I would certainly buy from that brand, if I were to buy a good set of headphones.

Hey I guess you should check in to some sites that offer such product with related to I-phones and Bluetooth headsets, as they have a wide variety of choices wherein you can check out the ones that are more of keen interest...
I am not a big fan of earphones either, they just don't fit properly and are uncomfortable.
As far as gaming goes, I use Turtle Beaches. The model I have is out of production, and I have had them for a while now (3+ years). They are durable and the sound and mic quality is very good.
As far as just general use goes, stay the hell away from Skullcandy or Beats. They are overpriced (At least Beats are) and are very cheaply produced. I have had two pair of skullcandies and both of them have broken on me within a couple of months of use.
Sennheiser's are generally good headphones, are are usually in the 90-150$ range. Compare that to Beats by Dr. Dre which are in my opinion lower quality and carry a hefty 262$ price tag. Bose and Phillips are other good brands.

Modest: Bose AE2, Anything Sennheiser or Grado makes in the 50-125 range, Alot of the Sony Stuff. Shure has some good stuff in this price range
Low(25-50):Sony,Bose,Sennheiser. Phillips SHL5800.
I use the Sennheiser HD 558 around the house because they are 200 dollar headphones that i found for around 100 and the sound quality is just far superior then anything in that price range. I don't got out in public with them though because they are ugly.
For portable use, I use Sennheiser CX500 because there are sleek in ears that are relatively cheap and pack a hell of a punch
For Mic headsets, go with turtlebeach.
I can support the majority of what is said here. Grado and Sennheiser in the $75-150 range are both money, but know that you will get more value out of them if you are using an amplifier. Grado for acoustics & soundstage, Sennheiser for bass and less tinny (you'll know it when you hear it) cymbols/high hats.

I hope I've only just missed it, but I'm pretty surprised no one has recommended the Audio Technica AD700. They are good for gaming as they have a very decent sound sig and wide soundstage for a low price. They are full sized though and should only be used at home.
I personally use Denon D2000's but I like some bass in my music listening, which AD700's are a bit light on, at home and Audio Technica CK10 on the go.
For portable music, just go with in ears; there's nothing that beats them in sound isolation. Give us an idea of budget and I can help you out more. Otherewise look up the Koss KSC-75 or Portopros. They're decent for the price and have lifetime warranties.
EDIT: RE: Skullcandy, Bose and Beats by Dre, although they might look good you're sacrificing a lot of sound quality for the money that you're spending on mere aesthetics.

I don't buy in-ear headphones anymore. Mostly because I somehow find a way to break then within 3 months of buying them.
For gaming, I own a pair of Tritton AX720's. They're awesome. They cancel out the noise around me, and perform with the same quality as TurtleBeach headsets. They give me surround sound in my head, which is nice. They might be a bit expensive, but I've had it for a long time, and it has yet to glitch or break or anything like that. I definitely recommend investing in them.
I also own a set of AX720's and they do not cancel sound at all. If you have the sound way up you can't hear things around you but at those levels when you take them off you won't be able to hear anything either. They do offer very nice surround sound replication plus a crisp, clear, timbre for music and other listening, that I find to have a much fuller range and color than the TurtleBeach headsets.
For for gaming on PS3 and PC I use: Tritton AX Pro (Dolby Digital Surround Sound) - I like these a lot, I got them for FPS games mostly (MW2 Danger Close Pro). The amp and cord are a little shady, at least for me, and I wish they were wireless. They work really well though for the most part. I'd give them a 8/10.
For my ipod I use: Beats By Dre Studio - I like bass, am a rap/hip hop fan and wanted some noise cancelling headphones that bump for plane trips, etc. Plus all the NBA players were rocking them, lol. I love the sound and would rate them a 8/10.
For my recording studio I use: Sennheiser HD 280 Pro - I make rap beats and record/produce my own songs (link in sig) and mostly do stuff on the monitors (KRK Rokit VXT8 and KRK 10s Sub, would rate 10/10 on both), but wanted another reference so I got these. Not the best quality ever, but the sound is flat and they are the highest rated in their class/price. Would give them a 10/10 overall.

I have had a pair of AKG 240s for about 6-7 years now, they're pretty awesome set of headphones.
Good isolation, good sound.
Not too pricey compared to some others, think you can get them at around $100-120 nowadays.
Grado are always good, as are Sennheiser.
Stay away from Skullcandy, Beats and Bose, all pretty crappy while having a price higher than what they are worth.
Lemme update: after breaking two or three more pairs of earbuds I'm down to using my Sony V6's and a $5 cheap pair of Koss over-ear headphones that haven't broken yet. V6's FTW but I can't afford to keep replacing the most fragile pieces of electronics ever invented.

I use Koss PortaPro for PC/Music/Games and a random pair of earplugs for iPod when I'm outside because I hate hearing all the real world noises over my music and the earplugs go pretty deep into my ear so I can't hear anything but the music and that's the way, uh-huh, uh-huh, I like it, uh-huh, uh-huh.
Hi. I used to use Skullcandy, but after three sets broke on me in a span of three weeks, I went out and bought a headset from Bose.

for music i had a pair of sony ear buds. they did really well.
for gaming i would look at senns. some of the models are higher priced but they are well worth it.
the 160's just basic audio were great.
