Does the card give me untap lands for every creature that deals combat damage to an opponent? Say, I have two creatures whacking and dealing combat damage to ONE opponent, do I get to tap his lands twice and untap my lands twice?
Does the card give me untap lands for every opponent my creature deals combat damage to? Say, I whack opponent A with creature B and whack opponent C with creature D, do I get to tap each of my opponent's lands and untap my land twice?

No. Nature's Will triggers on "one or more creatures you control", so it doesn't matter how many creatures you connect with, you untap once.
Does the card give me untap lands for every opponent my creature deals combat damage to? Say, I whack opponent A with creature B and whack opponent C with creature D, do I get to tap each of my opponent's lands and untap my land twice?
Yes. Nature's Will triggers on "combat damage to a player", so hitting two different opponents triggers it twice.

No, because of the phrase "one or more". That phrase makes it so it's only one trigger event no matter how many creatures deal combat damage to the same player at the same time.

As you may have surmised from the first answer, in that case yes, because the ability says "a player" and not "one or more players". In that case, the trigger event happens multiple times, so you put multiple triggers on the stack, for what that's worth (you can tap the lands in between the untap triggers resolving to get more mana, for instance, but you would normally need to use that mana during that very combat damage step, or it vanishes as that step ends).

So, I cannot, after combat, untap my lands, cast creatures, untap my lands again and cast creatures again because you said I need to use mana during that very combat step, am I right?
BUT, I can untap my lands during combat, cast giant growth, instant whatever, untap my lands again and then only cast creatures, am I right?

That's about right, yes, it's a given that nothing forces you to retap your lands immediately after the last untap trigger has resolved, I was talking about the mana you could get inbetween untap triggers. Note that something like Giant Growth likely wouldn't do much at that time since combat damage has already been dealt and your creatures would have already been destroyed appropriately at the time you could cast it.
