Well after solitaring Parfait a couple dozen times, I have come to the conclusion that I'm not a fan. Its like you're trying to accomplish two different plans at the same time using the same tools but you can only use each tool once.
Any other suggestions?
How about a Pox build? Mono Black Pox can be pretty damn cheap too, depending on how you build it.
On a side note, I feel like lockdown-type decks are difficult to solitaire effectively. It doesn't really give you a good idea of how the deck plays out.

The Gate doesn't look like a deck that could make you feel like you're locking your opponent down, but against some decks, you just gradually, incrementally, take over the board and game. You don't as much stop the opponent from casting things as have more of it and remove a lot of what they put out with copious removal and such.

I will second the choice of pox as a lockdown deck, however the monoblack version tends to be repetitive. The black/green version (with entomb package and life from the loam) leads to much bigger decision trees and varied board states.

Affinity should be a budget deck anyway and there are multiple ways to build it so I'm not sure why you are playing lotus petals.
Anyway, to get to possibilities: elves can be an option as glimpse is the draw power for the deck. There are pricey options available, but a core mana elves engine is really all you need. You can invest more if you want natural order, gaea's cradle etc.
Piledrivers only home is goblins. Jitte will be fine in any deck with creatures really, including elves. Though it isn't necessary in some decks for various reasons. Top can lead you to decks like painted stone or miracles. Decks that need manipulation or decks that don't have card draw and need it as a gloss over. Chain lightning doesn't see much play outside of burn which would probably satisfy the budget concern.

There are definitely other decks that are doable, but my first thought is Merfolk.
Can someone recommend an easy to pilot deck that i can play in dailies online to learn the format?
I've played jund through 3 or 4 dailies and some random 1v1 queues and maybe won 2 actual matches.
I can't seem to beat anything other than elves and merfolk. And maybe the occasional delver deck. Everything else curb stomps me.
It doesnt help that I don't know how to sideboard.

Sell those cards. Finish Affinity. Have a one full deck instead of a bunch of unfinished piles. All of the cards in your list are rather expensive and should be more than enough to complete Affinity. Once you'll have a deck you might as well start slowly acquiring cards for more.

I'm don't want to right spend $25 on each Stoneforge mystic.The easiest deck I could make out of the cards I have lying around is Red Deck Wins. I would just need to buy a playset of Goblin Guides and bunch of other cheaper red cards. It would cost me about $40 or $50 to make that deck with the cards I already have. I wasn't sure how good of a deck it would be compared to the more expensive legacy decks out there.

I have a 1 show and tell lying around I was thinking I should sell and I could get a few cards that way. I could have made my Affinity deck for modern but the legend rule changed things so Mox Opal is now at least a 30 card. I'm not going to spend $120 on a playset of Mox Opals so I decided that I would make my Affinity deck a Legacy Deck. I could purchase 4 Chrome Moxes and that would be much cheaper. I'm trying to think of a 2nd deck I could make with the cards I have lying around. I have 3 Jitte's, 3 Divining Top, 4 Chain Lightning, 2 Glimpse of Nature and 2 Pernicious Deed.

It is, indeed, possible to do this: dig out old decklists and versions of the primer, and you'll find such lands as Forbidden Orchard and Undiscovered Paradise, along with the usual suspects, producing the mana needed for the deck to do what it does.
These lands aren't used in the current lists due to vulnerability to Wasteland and Rishadan Port, but losing the shuffle effect needed to use Brainstorm optimally is important as well.

Welcome to Legacy! You know, a lot of new players (myself included) lose a lot of games with whatever their first (and second... and third... and fourth...) deck choice is. I still drop a lot of matchups, favored and unfavored, and I've been playing Legacy (almost exclusively) since 2009.
Don't sweat it. This is probably not purely a function of deck choice. There is no perfect deck. Each of them has weaknesses that other decks try to exploit. In some cases, the entire reason a deck exists might be a favorable matchup against your (popular) deck choice. I keep a Jund deck proxied up, and I test against it quite a bit, just to make sure what I'm bringing to the tournament doesn't crumple before it. I've got a whole gauntlet of top decks sleeved up this way, and I'm not the only person who does this. There are whole teams of people who take the game very seriously. When a newcomer arrives on the scene, you can imagine the results. These veterans know all the decks. Whichever deck you choose, odds are that your opponent will have more experience playing it than you do, and have especially focused attention in this particular matchup from their side of the board. Until you can say the same thing, it'll be tough.
I'd advise you, therefore, not to bother changing decks and trading cards. Go to battle with the army you've got, which is probably a Burn deck, and don't believe that it's not a skill-testing deck. There's a lot more to it than is generally acknowledged. Most of its challenge is in preparation. One of its chief virtues is allowing you to devote a lot of attention to your opponent's activities. Playing Legacy isn't about knowing how your own deck works: it's about knowing how every deck works.

I'd check out Deadguy Ale and Jund. Aggro Loam and W/B Stoneblade have control elements, and card advantage in Confidant and Mystic (+ Lingering Souls & Bitterblossom for Stoneblade) but might not have enough threats for you.

Really agree with Jund, sounds exactly like what they're looking for. Has so many ways to generate card advantage between BBE, Bob, Hymn and punishing fire. Has a lot of control elements while still being aggro.

I thought of another good candidate: Shardless BUG. I always forget that it doesn't need counterspells. And actually, two more decks that could fit the profile: Junk and Nic Fit.
Jund is pretty far out of my price range and I'm not a big fan of Deathrite Shaman, the rest of the decks you've all suggest I've looked at in the past, and have felt for the most part either underwhelmed or simply did not enjoy playtesting them.

I was just thinking I could make a Nic Fit deck. I wasn't sure if It would be a good deck to make. It seems like a good deck for someone making a deck on a budget. I'm not going use to any dual lands or cabal therapy because that card now is $20. I would just something like Ravnica duals instead. I have most of the cards to make that deck lying around. I would only need to spend about $40 to make that deck. I have 2 Pernicious Deed, 3 Divining Top, 2 Deathrite Shaman, 3 Abrupt Decay and 1 Phyrexian Tower.

Imperial Painter has lockdown pieces like Blood Moon & Magus of the Moon, can win in different ways, and has a bunch of spot removal in Lightning Bolt and, best of all, 1-mana Vindicates/Counterspells with Painter's Servant, Pyroblast, Red Elemental Blast, and Jaya Ballard, Task Mage (no counterspell on that one).

I personally brewed a black/white version running Enlightened Tutor and I can see myself playing this for years to come. Total cost was about $800.
