The added conditions definitely make it more difficult. If we assume the infinite mana comes from lands, then being at 1 life with an opposing manabarbs in play against an opponent with 4 life and no flyers would work as the solution.
If the mana is coming from a non-land source, though, then nothing specific leaps to mind.

Easy. You have a Pacified Bosh and Rod in play, are facing lethal damage next turn, and have open while your opponents at 12. Granite Shard only Flings for 3 damage and you can't activate it. Rod flings for 4 and Bosh Flings for 8.

Assuming you have other sources of mana, and can generate more mana than the opponent has cards in hand, hollow specter is better (or equal when the opponent has only one card in hand).

Ok, stay with me, this is a bit complicated. Player A is playing a red/blue haste/trick deck. Is at 1 life and echoing truth in his hands.
Player B is playing blue/white weeny counterspelling. Is at 3 life and has one card in his/her hand.
The game has been a race towards death. Player B just attacked with 3 creatures, knowing the enemy has haste. Then summoned another creature so now has 2 defending creatures. Then passes the turn to A.
Player A has a 2/1 creature with Shimmering wings. He untaps his lands(5 mountains, 2 islands) and draws a card (Vulshock beserker, 3/2 haste). He now has 2 cards in his hand, the vulshock and a echoing truth. Needing mana to recast his wings on the haster for the last 3 damage, A taps 4 mountains for his beserker. Knowing his enemy is playing countermagic, he activates his wings to return it to his hands instead of using the echo.
A says : "glad this is not 'Flight', now you can't counter it"
Player B smiles and plays a Stiffle against the wings ability (counter activated or triggered ability) : "You should have used the echoing truth".

Morale: if it was Flight instead of Shimmering wings, he would have used his echoing and would have won the game.
(This is the best I could do.)
