This may sound silly... but does anyone have pics? How does it feel? Is it much thicker? Does it make the sleeves all pooffy?
Yes, and yes. Though the poofiness can be removed by putting the cards in a longbox, filling it up, and making it super, super tight. Then leaving it like that for a week or two.
60 cards decks can still be handled/shuffled fine. Though it will look like you have your sideboard in there to a casual observer. Commander decks get a little unwieldy, but you can manage to stand the libarary without having it fall over.
I don't have pics offhand, but I'd guess the extra sleeve (clear KMC Perfect Fit) inside Dragonshields adds ~20-30% thickness when compared with only Dragonshields. I don't have experience with any other configuration (for double-sleeving that is).
Just wondering as to the benefits of double-sleeving versus normal sleeving? In my experience one set of sleeves works just fine in terms of protection, or is double for very valuable Legacy and such decks?
A word of warning; One condom offers 90%+ effectiveness, but two is too many and can cause breakages!

Plus, if you or your opponent have long fingernails, you may get an accidental nick when trying to lift a card off the table.
Double sleeving protects against all of this. I double sleeve all of my legacy and EDH decks. I also store all legacy staples in KMC perfect fits before I put them in my binders.
I use KMC Matte's with KMC perfect fits. I live by the perfect fits. Keeps cards nice and fresh. When I change out my perfect fits, you can see all the dirt on it that would be on your cards instead. Totally worth the investment.

I used to double-sleeve everything with KMC perfect fits upside down inside of Dragon Shields. Others have already mentioned most the benefits: protection for the top of the cards against direct physical contact as well as liquids, extra protection against dust/dirt that gets inside the bigger sleeves, and protection for the cards when resleeving.
I've actually stopped double-sleeving recently because I've found it just takes so much longer to re-sleeve, making it difficult to quickly resleeve during tournaments.

I recently Bought Ultra Pro Pro Fit, and I've found them to be useful, fits in really close to the card and I don't really notice any change in the thickness of the card. Only real difference is I noticed it feels much 'sturdier' then a regular sleeved card.
Since I'm a poor college student though I was only able to afford the fifty, so I use them right now to protect the Werewolves in my werewolf deck, since checklists were just impractical and I don't want to damage the cards while taking them out. I really haven't noticed any difference in visual appearance the card, I brought it up with the head of the club I play in to be sure and he said it was fine.
Definitely was impressed by the quality of the sleeves, and hope to buy more eventually to protect my Goblin EDH... I would hate for something to happen to my precious goblins...
I've got KMC perfect fit sleeves inside Ultra-Pro matte sleeves for just the one deck.
(It's a bit of a mission swapping large numbers of cards out of the deck so I tend to keep it to a deck that I know isn't going to change massively)
The Ultra pro's are the older size (67.03mm x 92.07mm) as opposed to the new tighter fit sleeves which are 66mm x 91mm. I haven't tried with the smaller size yet so I don't know if it would work.
I ordered some KMC perfect size (89 x 64 mm) that just arrived today. I was pretty stoked to sleeve up my EDH deck with them inside my Ultra Pro matte sleeves, but they weren't going to fit... at all. I didn't know the newer Ultra Pro matte sleeves were tighter. Bugger.

Dragon Shields or KMC Mattes are the best sleeves I have used with perfect fits. You're probably better off with shields for EDH since you get like 105 sleeves compared to KMC's 80.

I used to double sleeve my cards for a while with KMC Perfect Fit sleeves inside KMC Super series sleeves. They worked well, kept my cards safe, and only made my decks a little bit thicker after you squeezed the air pockets out of the sleeves. Unfortunately "a little bit thicker" was too thick to fit the decks w/ sideboards in the compartments in my Dragon's Egg bag anymore.
It was really just because of this that I stopped double sleeving. Sure, it kept my cards a bit safer, but I just really love carrying my stuff in that Dragon's Egg so the double sleeves had to go

Ultra Pro ones are way too tight. I've helped a friend sleeve his deck in them and the cards would bend when you tried to squeeze them inside. KMC fit Magic cards perfectly.
Not sure it's QC, I encounter the same problem as you described with the ultra pro, and yet there are some sleeves which seems longer than KMC. And that's from the same ultra pro pack.

Just FYI, KMC perfect fits won't go inside the cheap Ultra Pro sleeves, there's too much friction and you cannot get them in. The higher quality Ultra Pro sleeves with art on the back are ok, but it takes a bit of force. For best results, KMC sleeves work well with KMC perfect fits (for some strange reason).

Yep, like you and others have said, KMC perfect sizes fit the cards absolutely perfectly. I've bought 5 packs of KMC perfects and every single one is uniform in size. I can put all the cards I've sleeved with them together and they all match. With the Ultra Pros, some are too tight and some are too loose - and this happens within the same pack of sleeves!
KMC's material also feels nicer. It's nice and sturdy. Ultra pros feel a little flimsier.

I agree. Now that I know what to do, I'll definitely get some KMCs to go with the dragonshields already on my deck.
I think that is the best method to protect high value cards.
