Alright, from what I understand, if an opponent were to attack opponents in a two-headed giant game, do you attack the team or a player? If so, can the partner defend that player? Also, if I have a planewalker that's being attacked, can a teammate use a blocker to defend it?

You attack individual players or planeswalkers, this is necessary for a number of cards to function.
CR805.10b For each attacking creature, the attacking team announces which defending player or planeswalker that creature is attacking.
All players share the battlefield, you can defend your teammate or their walkers with your creatures or vice versa.
CR805.10d Creatures controlled by the defending players can block creatures attacking any player on the defending team or attacking a planeswalker controlled by one of those players.
