I'd just like a small clarification on how the End Step works.
If an ability such as Mystifying Maze's is used, and the creature that re-enters also has an "at beginning of end step" ability, am I able to skip that ability by ending the "beginning of the end step" after Maze resolves? Basically, I thought as long as a player's turn was in the end step that it was "the beginning of the end step" and that it was simply a transitional phase between Main 1/2 and ending the turn.

The end step only begins once, this is a very specific point in the turn structure, it is not a duration. Basically, the beginning of the end step is the time when the game moves from the second main phase to the end step. Any delayed triggered abilities and objects with triggers that trigger "at the beginning of the [next/your] end step" must exist prior to this specific point in time or they don't trigger. Nothing in the game ever triggers retroactively.

A creature must be on the battlefield at the beginning of the end step for its ability to trigger. Here are the Comp Rules:
500.2. A phase or step in which players receive priority ends when the stack is empty and all players pass in succession. <snip>
500.6. When a phase or step begins, any abilities that trigger “at the beginning of” that phase or step are added to the stack.
513.1. First, all abilities that trigger “at the beginning of the end step” or “at the beginning of the next end step” go on the stack.
So basically, at the end of Main Phase 2, after both players have passed priority on an empty stack, Main Phase 2 ends and the End Step begins. Per 513.1, any abilities that trigger "at the beginning of the end step" will trigger and go on the stack. This would be the delayed trigger from Mystifying Maze to bring back the exiled creature (let's use Avaricious Dragon). There are no other triggers that go on the stack, and the "beginning of the end step" portion of the end step has passed as you are now fully in the end step. If you're familiar with step functions, it's like a rising trigger on a step function. Anyway, Avaricious Dragon comes back to the battlefield once Mystifying Maze's trigger resolves. The game is no longer in the beginning of the end step. It's in the end step. So Avaricious Dragon does not trigger since it was not on the battlefield at that time.
