Naga Vitalist doesn't care about any restrictions or riders your lands put on the mana they produce, such as the one Cavern of Souls has. It just cares about types of mana.
This was taken from the rules section about Naga. So my question is... can it make uncounterable mana that was designated by Cavern? What about lands like boesiju who shelters all? Does it make uncounterable mana for instant and sorcery or just add pure colorless?

To the people that say that a card needs to be a higher rarity because of Limited... I hate you guys so much. I present to you with this.
For the purposes of Naga Vitalist, Cavern of Souls "could produce" any type of mana: any of the five Magic colors and colorless (C.R. 106.1b, 105.1; under C.R. 106.7, only the type of mana it could produce is relevant here). Therefore, you can choose any type of mana including colorless (C.R. 106.1b). However, spending the mana produced by Naga Vitalist won't be restricted to particular spells or have the effect that a spell "can't be countered"; in other words, any restrictions or other effects on the mana produced by Cavern of Souls are not carried over (because Naga Vitalist's ability itself doesn't impose any restrictions or other effects on the mana it produces).
In that sense, "Naga Vitalist doesn't care" about those restrictions or other effects on the mana Cavern of Souls could produce in two respects: when determining the types of mana a land "could produce", and when determining whether the mana Naga Vitalist produces has any restrictions or other effects on it.
