Hi. I'm trying to smooth out my deck for game day. My question is, when I cast insult/injury do my creatures attack unblocked, or can they still be blocked?

"Damage can't be prevented" just means "effects that prevent damage don't work". It applies only to things that actually say "prevent". Your creatures can still be blocked, your damage spells can still be Canceled, and so on.
Fog will fail to prevent the damage from your attacking creatures, yes. That's what Insult's first effect does.
