I cast Entrancing Melody on my opponent's kitchen finks to gain control of it. It has no counters on it and dies triggering persist. It will go to my opponent's graveyard since she is the owner of the card and the Persist trigger will place it under my opponent's control via the "it's owner" language in the Persist text, correct?
Correct. The control change effect ends with the death of the Finks, and while you are the controller of the trigger due to having controlled the Finks last, the creature still returns under its owner's control as per persist. Even if it didn't spell this out, a permanent enters under its owner's control unless otherwise noted.

110.2a If an effect instructs a player to put an object onto the battlefield, that object enters the
battlefield under that player’s control unless the effect states otherwise.
