Under M.T.R. 3.15, which applies to sanctioned tournaments, "[p]layers ... do not have to swap [cards between their main deck and their sideboard] one for one". However, in constructed play, a sideboard may not contain more than fifteen cards (M.T.R. 6.1; C.R. 100.4a).
Your sideboard cannot ever contain more than 15 cards and your main deck cannot ever contain less than 60 cards. Within those constraints, you can switch things how you want for games 2 and 3.
