So say I have a creature and an opponent enchants it with Fool's Demise, which says "When enchanted creature dies, return that card to the battlefield under your control." But if I put Hexproof on the creature (With Archetype of Endurance, which gives all creatures I control Hexproof) after it gets enchanted, will the enchantment's ability be able to Target the creature when it dies since Hexproof prevents the targeting of abilities or would Hexproof not matter since it is already enchanted.

Fool's Demise only targets the creature when it is attached to it. It does not target when the effect resolves as it does not use the word target in the resolving effect, so hexproof would not prevent the effect of the enchantment from resolving once it has already been attached.
