What will happen if I sacrifice Blood Speaker when using Victimize spell and returning a demon from graveyard into play? Will it go to the graveyard and then return to my hand due to its second ability?
If you sacrifice Blood Speaker with Victimize, Blood Speaker will be in your graveyard in time for it to notice whether a card you bring to the battlefield with Victimize enters the battlefield as a Demon under your control (C.R. 608.2c, 701.17a). When a Demon enters this way, Blood Speaker's second ability will trigger from your graveyard (C.R. 109.5, 113.6k, 603.2). (Notice that the ability works in the graveyard because it mentions that it moves Blood Speaker out of the graveyard [C.R. 113.6k].)

Yes.
But I'd like to go a little further: what specific aspect of this situation made you unsure that this would work?
I thought so, but wanted to make sure if its not like Victimize’s abilities work „at the same time”, so BS goes to graveyard the same time demons goes back
Victimize's instructions are carried out one after the other and in the order written, because it uses the action verbs "sacrifice" and "return" to refer to different actions (C.R. 608.2c). See also this thread and this thread.
Victimize has only one ability. Blood Speaker has two.
113.2c An object may have multiple abilities. If the object is represented by a card, then aside from certain defined abilities that may be strung together on a single line (see rule 702, “Keyword Abilities”), each paragraph break in a card’s text marks a separate ability. If the object is not represented by a card, the effect that created it may have given it multiple abilities. An object may also be granted additional abilities by a spell or ability. If an object has multiple instances of the same ability, each instance functions independently. This may or may not produce more effects than a single instance; refer to the specific ability for more information.
113.3. There are four general categories of abilities:
113.3a Spell abilities are abilities that are followed as instructions while an instant or sorcery spell is resolving. Any text on an instant or sorcery spell is a spell ability unless it’s an activated ability, a triggered ability, or a static ability that fits the criteria described in rule 113.6.
608.1. Each time all players pass in succession, the spell or ability on top of the stack resolves. (See rule 609, “Effects.”)
608.2c The controller of the spell or ability follows its instructions in the order written. However, replacement effects may modify these actions. In some cases, later text on the card may modify the meaning of earlier text (for example, “Destroy target creature. It can’t be regenerated” or “Counter target spell. If that spell is countered this way, put it on top of its owner’s library instead of into its owner’s graveyard.”) Don’t just apply effects step by step without thinking in these cases—read the whole text and apply the rules of English to the text.

Why bother with mere rulings when so many answers can be found in the Rules?

Even in the case of both the sacrifice and the return happening at the same time, you would still get the BS's trigger. That is because BS's second ability is a normal triggered ability and is checked based on the game state after the event. Interestingly enough, if BS also had a leaves-the-battlefield triggered ability, that one would also trigger, and at the same time, but based on the game state prior to the event. Because LTB triggers are an exception to normal trigger checks.
