Can I:
Enchant 1/1 hexproof creature (e.g. Gladecover Scout) with Arcanum wings, then declare that creature as an attacker, wait for my opponent to declare no blockers (because he doesn't have any flyers) and finally use aura swap to cheat a Colossification in the game dealing 21 damage to my opponent?
From my understanding of rules, this should be perfectly legal, but I just want to make sure

Sure, why not? (Seriously, if the opponent has a specific complaint about that sequence, what would that be?)
702.64. Aura Swap
702.64a Aura swap is an activated ability of some Aura cards. “Aura swap [cost]” means “[Cost]:
You may exchange this permanent with an Aura card in your hand.”
702.64b If either half of the exchange can’t be completed, the ability has no effect.
Example: You activate the aura swap ability of an Aura. The only Aura card in your
hand can’t enchant the permanent that’s enchanted by the Aura with aura swap. The
ability has no effect.
Example: You activate the aura swap ability of an Aura that you control but you don’t
own. The ability has no effect.
I assume the hexproof is just to make it difficult for the opponent to do anything else to it.

Yes, this is a valid play.
You receive priority after your opponent declares blockers, and Aura Swap can be activated at instant speed.
[c]Arcanum Wings[/c] -> Arcanum Wings
[c]Colossification[/c] -> Colossification

I just wasn't sure, since no Arcanum Wings deck I was able to find, used Colossification.
