Can I blink Weight of Conscience in response to its activated ability in order to then attach it to another creature on my opponents board and remove the first creature it was attached before attaching the aura to another creature.
Example, I activate Weight of Conscience ability then blink the aura, in response, does that remove the creature then am I allowed to reattach the aura in order to use it again
If Weight of Conscience leaves the battlefield by casting, say, Flicker (together with a means to cast it as though it had flash) in response to its ability, casting that spell doesn't affect that ability (C.R. 112.7a). The ability will still refer to "enchanted creature" and exile it when it resolves, since Weight of Conscience was attached to that creature at the last moment it was on the battlefield (C.R. 112.7a, 608.2g).
When Weight of Conscience returns, it will be a different Aura from the previous Weight of Conscience (C.R. 400.7); you must attach it to a creature if possible (which can be the same creature, since the first enchanted creature wasn't exiled yet) (C.R. 303.4f-g). Then you can activate its ability again to exile the creature it's attached to.
Just to avoid any confusion: Momentary Blink doesn't work as an example because it can only target creatures, and it's Weight of Conscience itself that must be "blinked" for this. We can replace it by, say, Flicker in the scenario.

On the same note, though, Flicker doesn't work either, because as a sorcery it cannot be cast in response to activating the ability. So you also need something like Leyline of Anticipation.
