I was trying to counter my own spell to save myself from decking using devious cover-up, but for some reason, the system doesn't give you a chance to respond to your own spell...it just plays it...how do you solve that?
You need to enable full control (shift + control). The game is built in with a number of ease of life features like assuming you want to pass priority automatically after casting a spell. Full control asks for every priority change, manual mana tapping, etc
Yeah, there's quite a bit of things the tutorial doesn't teach us. Even pausing for priority on opponent's phases isn't there, it took me several days of playing before I realized I can just click the opponent's phases to pause. As much sense as it makes for them to do this for new players, it also does a disservice to them by essentially not telling them that these things exist.

I can understand why the tutorial didn't tell you these things, it's more focused on making sure you have the concepts of the game down, and to a lesser extent to really basic things like how to play cards and tap the right lands for them. And the game does tell you these things somewhere - in the matchmaking screen when you're waiting for a game. A lot of those tips probably should be available elsewhere, but I've been able to learn most of the tricks through reading those and the rest by trial and error. It's not that bad.
