No knight is complete without a holy sword to help him smite evil (Arthur is nothing without Excalibur.) And what better sword than Sword of Fire and Ice? It's powerful without being broken, well-liked, hasn't appeared lately, and if Sword of Mind and Body is indication, an appropriate mythic-level card.
Alternatively, what about Akroma's Memorial getting promoted to mythic. It's powerful, well-liked, hasn't been reprinted lately, and has a knightly-flavor. Plus, it's got Akroma in it, which means people would probably buy the thing no matter what the knight deck looks like.
