While not a major theme food is certainly comes up in fairy tales a bunch.
Looks like we got our answer Oko is UG, which is nice now we got two simic walkers along with sometimes simic Nissa and Tamiyo.

So after thinking about it I think I have an idea of what the Food token is supposed to do. Food reverts a creature or artifact back to its original state.
Here is my thought process.
1. His ultimate is meant to be used to exchange Elks he creates.
2. Exchanging a creature or artifact you control for a creature an opponent controls is powerful, but with the power 3 or less restriction it is not especially useful, especially to just get a 3/3 Elk.
3. But using a Food token to undo a transformation after exchanging control of an object seems a lot more like an ultimate.
4. There is a lot of transforming, cursing, disguises, and glamours in Arthurian and Fairy Tales. I could see it being a theme. And every theme needs a way to interact with it and what better way to interact with it than being able to undo the transformation/curse/glamour/granny-pajamas. Hence food tokens.
It doesn't explain what a Food token is, so it is fair to assume that it's a very simple, and vastly present in commons in the set (with the proper reminder text).
For a simple effect it might be something that sacrifices for life gain or +1/+1 for a turn. The P/T bonus might lead to high board complexity, so I'm leaning towards the life gain option.
I have another idea, I imagine that the text of a food token as something like this:
"Artifact token - Food
Sacrifice this: purify a nontoken permanent you control (purifying a permanent means returning exactly to the original card text, removing any changes applied afterwards).
I feel like the second and third abilities already cover blue pretty well so the Food token is going to be more rooted in the green part of Oko's identity. My guess it food provides some kind of p/t pump until end of turn--maybe incorporates life gain.

Sacrifice Food: Target creature gets +2/+2 until end of turn. You gain 2 life.
Since he doesn't put tokens into play - he just transforms the creature - Food tokens might be cracked to blink a creature. The blinking, I think, would return a creature to the battlefield with its original abilities, no? So a creature becomes an elk, gets traded for food, then you use another food token to blink the stolen creature and it returns as the creature it used to be.
Food is indeed involved with magic quite often, and also with fairies and associated bods particularly. Fairies have been said to either be pleased or offended by food offered to them by humans in various bits of folklore.
Since food is something that sustains or improves the condition (normally) of the being that seeks it, I imagine it would give +1/+1 counters and/or life, though I would vastly prefer counters to life since it synergizes so well with proliferate.
Food are artifacts. This make Oko a lot more fun and flavorful. Turn some breadcrumbs into an elk and/or switch it out for something fun on your opponents side. Very trickster feeling.

He looks good in limited (without any information on what are food tokens). His best ability is the seccond one: Removing all abilities from an artfact or creature (beast within on a stick) is good, just a shame that they didn't use a token to remenber what is changed and what is not. A first pick in draft, usable in limited and probably gonna be used on the UG mass manipulation deck in standard.
A interesting thing about the card is that the collector booster version has another collectors number.

i'm not at all a fan of this slow rolling spoilers crap, and then making it even slower by trying to drive a hype train through keeping mechanics hidden forcing us to speculate... well... every leak thats ever happened is really their own doing by creating a culture that wants spoilers that they can't get.
Cards should at least somewhat explain themselves.
"Food counter" is just a stupid mechanic right out of the box, simply because it doesnt explain anything at all.
Otherwise the card is pushed to beat all the big fatty finishers, a job it certainly quite good at, as long as you have the 4/4 or bigger around to demonstrate your alpha status among the 3/3s.
I’m...not sure how I feel about food tokens. Treasure, gold and energy feels epic. Clues feel mysterious.

I could be wrong. It could end up being a great mechanic.
Tell that to Indiana Jones, Jack Sparrow, Popeye, Donkey Kong, Eris, Persephone, and anyone who reads the Bible. Food can have powerful symbolic meanings and often plays a vital role in stories, whether as a source of strength, a means by which to poison someone, or as a token of love.
I've wanted Food to become a token type for a good while now. Like Treasure, it's one of those concepts that virtually any plane can use.

Every time I read a comment about "Well if this card had card draw/trample/haste/indestructible/hexproof/life gain...", I think "You're missing the point." They're armchair developer comments that fail to take into account the card's role in the greater Limited and Standard environment. No, it may not be as good as whatever card you're comparing it to. There's a reason for that. Not every burn spell is Lightning Bolt, nor does it need to be or should be.

Interesting card. We know food is an artifact because MaRo said on his Tumblr, so we know that whatever Food actually does, Oko can +2 and then -5 the Food away to get a creature from the opponent.
Maybe that ties into Adventure cards?
