These titans make me wonder how playable they are if you don't intend to Escape them or at least don't expect to every game. They seem pretty good as what are essentially legendary sorceries without the need for other legendaries.

IMHO, that should be the expecation - the titans actually coming into play is fairly difficult to set up so the real question is, does your deck want the evoke effect. I'm quite sold on the evoke effects having value if they were printed as sorceries.

It's a bit of a tough sell, this is basically growth spiral but without the end of opponents turn playability and plus one mana. Having flashback is important here though, I think.

If your deck is hungry enough to run Growth Spiral 5-8 then this is worth looking at. The escape cost is not easy to manage.
There are multiple ways to manage the escape cost. Tamiyo, Calavier of Thorns, Emry, Tymaret Calls the Dead and Drowned Secrets all have great self mill effects.
Tymaret Calls the Dead turn 3 and Escape a titan you milled with it turn 4 is easily possible.
It's worth noting that if you play them normally and have an oven in play you net two food.
I don't think there will be a single deck that includes Simic that doesn't play at least one Uro for the late-game.

Many thanks to DNC at Heroes of the Plane Studios

Example:
Turn 5 7 Mana
Evoke. draw gain drop
Escape him. Draw gain drop
Evoke a second one. Draw gain drop.
Bye bye aggro. No worries, black will dominate. Exile is key.
