Logically, because -1/-1 isn't damage, you should have to do lethal to creatures (meaning deathtouch is negated). I don't know if the rules have a clause for this but I don't see why not since wither has been around.

Damage is damage is damage. Whether the damage is in the form of -1/-1 counters or not, it's still damage. As such, Deathtouch/Trample means you only have to assign 1 damage to each blocking creature, and assign the rest to the defending player.

Does it place infinity -1/-1 counters or just enough to kill it?
Does it kills indestructible or not?

Infect+Deathtouch+Trample doesn't change much compared to when Infect is not involved. It still needs 1 damage to be considered lethal. Which would result in one -1/-1 counter if it had Trample and then the rest would trample over to the defending player if you want. Without Trample, it would just place as many counters on it as it is dealing damage.
It would kill Indestructible creatures if it hit for enough damage to put enough counters on it. So, if you were attacking with a 5/5 with Infect, and they blocked with a 6/6 indestructible, it would get 5 counters and go to a 1/1. It would not die regardless of deathtouch because damage is a destruction effect and indestructible creatures cannot be destroyed. They can die from their toughness being 0 or less which is why Infect so work well against them.
