I have a large collection that's been gathering dust in my closet (sealed product, some high value cards, a few very high value cards). I don't want to make the time to part out and sell the collection card by card, would it make sense to try and sell it at GPNJ? If so, how would I go about doing it?
Large events like that charge vendors a table fee to buy/sell there. If you don't pay up, expect to be escorted out if you try and sell to players. If you're trying to cash out your collection to the vendors, please don't. They're going to be incredibly busy, and dealing with someone's entire collection is NOT what they want to be doing.

Not really, most vendors do not have the space to transport sealed products. These people are mostly flying to events. They don't want to pick up sealed product because it would cost too much to ship back to their ware house.
Maybe try contacting one or more of the vendors that will be there and see what they say?
A lot of vendors actually can't buy sealed product from players - only from distributors. I asked SCG for a quote on some of my sealed boxes, and they flat-out said "We don't do that - we'll open it in front of you and quote you on the singles."
Sell the sealed stuff on eBay. Maybe take the singles to Jersey. A couple weeks ago I would've said "Meet me there and I'll make you some offers", but due to personal circumstances I can't make it this year.
