Made a pretty decent cucumber sandwich yesterday, which is surprising because I usually don't like cucumber with other things like bread that often. I got the idea from 4chan''s /ck/ board.
Tart Cucumber Sandwich
Whole grain bread
Dijon mustard
Romaine Lettuce
-Red Pepper Mayo:
Mayonnaise
Sea Salt w/garlic, parsley
Cracked pepper
Liquid hickory smoke
Dried ground red pepper
Pickling cucumber
-Cucumber vinaigrette
Extra virgin olive oil
Red wine vinaegar
Salt and pepper from above
I had the red pepper mayo in advance, which is slightly spicy and smoky without being overpowering. I sliced the cucumber thin and widthwise initially to make a salad, but I decided to go with the sandwich. I put equal parts oil and vinaegar in a bowl, with salt and pepper to taste, and tossed the cucumber slices.
The bread was toasted first, then each slice recieved some mayo. Mustard then lettuce went on one side and the cucumber on the other. A little more pepper and it was done. The sandwich was crisp and tangy from the vinaigrette and mustard, while the pepper and mayo gave some balancing flavour.
To start off, I was rummaging through the basement today and I found our old grill press, so after washing the panini grill plates I decided to make a grilled sandwich. I was shooting for an onion turkey melt, where the turkey is a Tofurkey brand soybean-based meat substitute, made like roasted turkey slices.
I started by taking two slices off of the middle of the onion, which turned out to be not enough after they were cooked. I dropped the chopped onion into a nonstick frypan with vegetable oil and went for the rest of my ingredients. The cheddar cheese has molded over, crap. So now my 'melt' has no cheese. Whatever, I grab two slices of bread, put Baconnaise on each, and slap down the turkey slices while tending to my onions. At this point I put a few drops of liquid smoke on my onions because everything should taste like bacon.
The onions sautee faster than I thought and my grill press isn't hot yet. I decided to put some bbq sauce in to finish the onions and the oil started to spit harshly so I took the pan off of the heat, tossed the onions in the sauce as the sauce was starting to cook itself on the bare pan, and placed the onions on the sandwich. Then I closed it, spread a little margarine on the outside, placed it on the press, did the same to the other side, and pressed it.
I really squished the sandwich, I forgot how heavy the press was! So I ended up with a toasty, skinny little grilled sandwich of oniony goodness. Even without the cheese, I was satisfied.
I love baconnaise.I include it on all my sandwiches, since I'm also vegetarian. That thing is a godsend.

I can use TVP for ground beef in a pinch, nothing for pepperoni at the moment. I do eat Japanese food frequently. There are a lot of sushi restaurants around here in particular, and they're actually pretty good for vegetarian options. I don't eat any fish.
I haven't updated the log in a long time, but sadly there is a reason for that as I simply haven't been cooking. When I do have to fend for myself it has been stuff like instant ramen, kraft dinner, frozen meals, ordinary sandwiches, and stuff like that. Currently I never really have the stamina to be up and properly cooking for myself, with the dizziness and all. A few soups sort of count, but even then they're from a concentrated vegetable stock and I just add instant ramen and/or a random assortment of spices and herbs

Yeah, I've had chronic dizziness that has made me mostly housebound for the better part o a year now. I rarely have the stamina to cook a proper meal without the dizziness either escalating to a dangerous level or to otherwise leave me incapacitated for hours later.

My family has moved into a new house with a much larger kitchen and fancy technology like a convection oven, gas burners, and a dishwashing machine! I've not been too bad recently so I've done a bit of cooking. Tonight I made something loosely based on aloo gobi.
Chickpea Potato Roast
Russet potatoes
White onion
Chickpeas
Extra virgin olive oil
Curry powder
Sea salt
Cumin seeds
Garlic powder
Other various spices
I quartered the potatoes, diced the onion, rinsed the chickpeas, threw it all in a casserole dish, and mixed it with the oil and spices. It roasted for over an hour, the potatoes took a long time to actually soften up X( It was really good though! I didn't use a set recipe and it worked out the first time so I'm very happy about that
I made a pesto sauce yesterday using this herb/spice kit that we buy from a local company along with the non-green ingredients like olive oil and RIDICULOUSLY EXPENSIVE pine nuts. Instead of using a random italian pasta I decided to do things a little different and fry some udon noodles with a little mirin and peanut oil, then toss the pesto in and warm everything up. Turned out pretty good, but the pesto is really oily and the recipe was too cheesy and salty. Still, it is nice to cook once in a while.
dang! im on a diet now, but seeing your recipes makes me drool over this oats that im eating... let me imagine this as that!

I usually substitute the Creme Fraiche for a similar amount of shredded mozzarella cheese. Mostly because Creme Fraiche is European and I live in the US.
I started making these a month ago, and I now refuse to make eggs any other way.
I made these eggs again today, with margarine, sour cream, and chives, over brown toast. H9-B4T0QEIWHOBAUO`H4TBFD34WEF SO GOOD. Seriously, you need to try it.
Also notes to myself from yesterday:
1) Don't try to make Zarusoba without proper ingredients
2) Green tea vegetable broth didn't work
3) Don't use leftover cold soba noodles to make a noodle salad without proper ingredients for the salad.
Eh, can't say I like fried broccoli, or zucchini in any form, but I might try it out someday with different vegetables. Thanks for the recipe!

No cooking experiment to share this time, just the annoyance of finding out that there is a rice cooker and a food processor (my 2 most desired cooking appliances) buried in the lofty heights of the storage shed which I am physically unable to explore. Nobody else in the family has the motivation to look for them, but they certainly wouldn't purchase new ones while we own used ones.
Definitely craving sushi rice and a hot salsa with loads of cilantro. Not at the same time, though. I think.
Fried some smoked tofu and white onions. Cooked rice with curry, chili flakes, and related spices. Dumped the rice in the saucepan to heat everything through and to mix it, then threw it in tortilla wraps with sriracha. Simple and tasty :3
I had this cooking adventure with my girlfriend a few weeks ago and just wanted to share it.
Stir fried Chick'n Potato salad (no dressing)
3 whole chicken breast
1-2 tbsp of salt
1/2 kilo of potato marbles
1 cup chopped onions
1/2 cup chopped garlic
1 green bell pepper (Chopped)
1 red bell pepper (Chopped)
2 tbsp Black pepper (cracked)
1 cup fresh basil (chopped)
1/2 cup Olive oil / butter
1/2 cup rice wine
Optional:
to add spice, we can use Chili oil if you have instead of olive oil, on the other hand, if you dont have, just add 2-3 pcs of chilli, chopped on saute.
1/4 kilo asparagus
1 cup diced carrots
Direction:
Pre cook chicken, either steamed or boiled, you can also try grilling if applicable. Once coooked, flake the chicken into tiny strips or bite size figures. then set aside. (do not include chicken skin to lessen cholesterol... but if your not that sensitive, you may as you wish)
the obvious: stir fry everything with olive oil / butter starting from onions to garlic, after caramelizing the onions, add the marble potato, either whole or chopped is fine as long as it ends up in your plate edible. we can also add carrots and asparagus if desired. once the potato is cooked, add in all the spice, green and red bell pepper, cracked black pepper, add chopped chilli if desired. lastly, add the chicken flakes prepared earlier. stir fry them together then add the rice wine for the extra flavor. then there you have it.

1.5 pounds chicken breasts (about 4 halves)
4-5 cups of chicken broth
1 carrot
2 onions
2 bay leaves
2 tablespoons butter
2 cloves garlic
Juice of 1 lime
1 8-ounce package of CATUPIRY CHEESE (or cream cheese if you can't find it) softened
2-3 cups of flour
2 eggs
2-3 cups of very finely grated bread crumbs
Vegetable oil for frying
Salt and pepper to taste
Preparation:
Place the chicken breasts in a large shallow pot. Cover them with the chicken broth, adding water if necessary to make sure the chicken breasts are covered by at least 1/2" of liquid.
Add the carrot and one of the onions (peeled and halved) as well as the bay leaves.
Bring liquid to a gentle simmer, and cook for 15-20 minutes, or until chicken is just cooked through (barely pink in the middle of the thickest part). It's necessary to cut into the chicken to tell when it is done. If some of the breasts cook more quickly, you can remove them earlier.
Set chicken aside to cool, and strain the broth. Reserve broth.
Shred the chicken into very small pieces. I use a food processor fitted with the plastic blade for this step, but you can also use your fingers.
Stir the softened cream cheese and lime juice into the shredded chicken.
Finely chop the second onion and the garlic. Sauté the onion and garlic in 2 tablespoons of butter until golden and soft.
Add the hot onions and garlic to the chicken mixture and stir until everything is well mixed.
Measure the chicken broth (you will probably have about 3 1/2 cups). If you have less than three cups, add more canned chicken broth to make 3 cups. Bring the chicken broth to a boil in a saucepan, and gradually stir in the same amount of flour as you have broth (so if you have 3 1/2 cups broth, add 3 1/2 cups flour).
Stir vigorously and cook for 2-3 minutes. Mixture will become a stiff dough. Remove from heat and chill in the refrigerator for 1 hour.
At this point, you can chill the chicken mixture and the dough for several hours or overnight.
To shape the coxinhas, take a piece of the dough about the size of a golf ball with floured hands. Roll it into a ball, then hollow out the middle for the filling.
Press a golfball size (about 1 1/2 tablespoons) piece of the chicken filling inside the ball of dough, and press the dough closed around the filling. Shape into an approximate drumstick shape, flouring hands as necessary. Stand the coxinhas on a baking sheet, so that the pointed end sticks upwards. Continue until you run out of dough or filling.
Whisk the eggs together in a bowl. Place the bread crumbs in a shallow pan (like a cake pan) and season with salt and pepper.
Dip the coxinhas in the egg, then in the breadcrumbs to coat. Chill the breaded coxinhas for 1 hour.
Fill a heavy-bottomed pot with enough oil to cover the coxinhas. Heat the oil to 360 degrees. Fry the coxinhas in batches until deep golden brown.
Serve warm.
Makes about 24 3-4 inch tall coxinhas.

Tofu is just fine by me, especially smoked I don't really get to purchase groceries most of the time because of my head. There's two vegetarians in the family though, and I can request that certain things are bought.
Organic food is something that I would usually prefer, but I don't put too much priority to it. Maybe once I've moved out and buying all of my groceries for myself, I'll look into it further.
I'm not sure if I've recommended this to you before, but I have a pretty good (and simple!) potato chip recipe. I just slice the potatoes really thinly after peeling them - usually a potato cutter will do just fine - and fry them in a small amount of (oil of your choice here - I like to use peanut oil or olive oil) with a bit of Lawry's seasoned salt on both sides. Pat them down with a paper towel afterwards, wait for them to dry a bit so they're crunchy, and voila.

2 eggs
2-3 cups of very finely grated bread crumbs
Vegetable oil for frying
Salt and pepper to taste
Preparation:
Place the chicken breasts in a large shallow pot. Cover them with the chicken broth, adding water if necessary to make sure the chicken breasts are covered by at least 1/2" of liquid.
Add the carrot and one of the onions (peeled and halved) as well as the bay leaves.
Bring liquid to a gentle simmer, and cook for 15-20 minutes, or until chicken is just cooked through (barely pink in the middle of the thickest part). It's necessary to cut into the chicken to tell when it is done. If some of the breasts cook more quickly, you can remove them earlier.
Set chicken aside to cool, and strain the broth. Reserve broth.
Shred the chicken into very small pieces. I use a food processor fitted with the plastic blade for this step, but you can also use your fingers.
Stir the softened cream cheese and lime juice into the shredded chicken.
Finely chop the second onion and the garlic. Sauté the onion and garlic in 2 tablespoons of butter until golden and soft.
Add the hot onions and garlic to the chicken mixture and stir until everything is well mixed.
Measure the chicken broth (you will probably have about 3 1/2 cups). If you have less than three cups, add more canned chicken broth to make 3 cups. Bring the chicken broth to a boil in a saucepan, and gradually stir in the same amount of flour as you have broth (so if you have 3 1/2 cups broth, add 3 1/2 cups flour).
Stir vigorously and cook for 2-3 minutes. Mixture will become a stiff dough. Remove from heat and chill in the refrigerator for 1 hour.
At this point, you can chill the chicken mixture and the dough for several hours or overnight.
To shape the coxinhas, take a piece of the dough about the size of a golf ball with floured hands. Roll it into a ball, then hollow out the middle for the filling.
Press a golfball size (about 1 1/2 tablespoons) piece of the chicken filling inside the ball of dough, and press the dough closed around the filling. Shape into an approximate drumstick shape, flouring hands as necessary. Stand the coxinhas on a baking sheet, so that the pointed end sticks upwards. Continue until you run out of dough or filling.
Whisk the eggs together in a bowl. Place the bread crumbs in a shallow pan (like a cake pan) and season with salt and pepper.
Dip the coxinhas in the egg, then in the breadcrumbs to coat. Chill the breaded coxinhas for 1 hour.
Fill a heavy-bottomed pot with enough oil to cover the coxinhas. Heat the oil to 360 degrees. Fry the coxinhas in batches until deep golden brown.
Serve warm.
Makes about 24 3-4 inch tall coxinhas.

Organic food is something that I would usually prefer, but I don't put too much priority to it. Maybe once I've moved out and buying all of my groceries for myself, I'll look into it further.
I'm not sure if I've recommended this to you before, but I have a pretty good (and simple!) potato chip recipe. I just slice the potatoes really thinly after peeling them - usually a potato cutter will do just fine - and fry them in a small amount of (oil of your choice here - I like to use peanut oil or olive oil) with a bit of Lawry's seasoned salt on both sides. Pat them down with a paper towel afterwards, wait for them to dry a bit so they're crunchy, and voila.
