Are there any other good options for this type of deck? Any that might work in conjunction with my general? (So far I only have two ways to actually untap him: Seedborn Muse and Minamo)
I guess enchanted evening and Aura shards'll get a table to scoop when Derevi loop infinitely can destroy every permanent you don't own (at instant speed).
With the Derevi combo, you get infinite mana and taps or untaps of any permanent - like springjack pasture or Thawing Glaciers or Seaside Haven - so he's a part of the combo. Without him as your commander, it's not much of a combo I guess.
Also - Divine intervention. This is the only format where it's really worth anything - and while it's a draw, it usually feels like more of a win than most infinite combo wins.
Haha, wow. I was considering running Enchanted Evening with Cleansing Meditation but decided not to at the last moment because they're both pretty terrible cards on their own. Now I almost want to run it with Aura Thief too.
Burntgerbil: Ah, ok. I figured it involved Derevi somehow but I couldn't see how it would work. I was just curious because I have Springjack and Wake in Rhys.
Be careful with Arura thief. He begs to be cloned by an opponent.
Yeah, I'd only drop it when I had High Market out. I wish that card would let me sacrifice permanents too. I have a few Enchantments that I will want gone at certain times (like Ground Seal).
There's a lot of cool stuff you can do with Enchanted Evening. Serra's Sanctum generates you all kinds of mana. The above Aura and Care let you blast any permanent at will. Aura Thief is obvious, Cleansing Meditation is strong, and Calming Verse works well too. Opalescence will Geddon the board while leaving you with an army of enchantments to bash with.
Some other wincons - Omniscience plus a few enchantress effects generally lets you draw your deck, at which point Laboratory Maniac wins you the game Opalescence + Parallax Wave lets you permanently exile all opposing creatures while repeatedly flickering your own creatures. Throw in Parallax Tide and you can exile all lands as well and generate infinite mana. Sigil of the Empty Throne and Ajani's Chosen will quickly flood the board with tokens, while Celestial Ancient will make them huge Words of Wind can basically Upheaval the board, as you can repeatedly bounce and replay your own enchantments while everyone else is forced to bounce their other cards. Sun Titan + Dance of Many + any enchantment sac outlet will give you an infinite number of Sun Titan tokens, just sac the Dance in response to the token generation ability, then make the token and it recurs the Dance.

I'll second Claws of Gix for a flexible sac outlet. It's extremely flexible and great at pushing through counterwalls. (If they can't counter your first/second spell, then you're able to play claws for free, whereas you might be out of mana for Ashnod's Altar or something.)
While it does cost mana, it's won me quite a few games. The lifegain can also be extremely relevant from time-to-time. Have you ever sacced all your lands to survive an alpha-strike, then beat face with your creatures? I have!
Divine Intervention says draw, but everyone knows you won. If you're not playing in a league or something where the win really matters, then it's perfectly fine.
Academy Rector tutors for a few win-cons, and can also grab a bunch of solutions. I'd highly recommend him. I can't tell you how many games I've played a sac outlet turn 3 and him turn 4, leading to playing the rest of my deck turn 4 and winning.

Great suggestions. There are way too many options. I only have one open deck slot and I haven't even stuck Enchanted Evening and co in the deck yet.
I'd really love to have Serra's Sanctum but sadly it's out of my price range. Still kicking myself for all the times I said I was going to buy/trade for one when it was sitting at about $14 and never did. I guess I just hate running cards that only work with one other card in my deck.
Claws of Gix: I considered running this one. My problem is that it's pretty meh on it's own and with my current list I think I only have two enchantments I might ever want to sacrifice (Ground Seal if I want to cast Auramancer, Reviving Melody or if I have Hannah out) or Eidolon of Countless Blossoms if I'm in danger of drawing myself out.I only have a few creatures and most of those aren't worth stealing.
Faith Healer I actually bought one for the deck but I don't know what I would cut for it.
Teferi's Care Great card, but narrow. It will definitely be a choice if I decide to go with the Enchanted Evening package, but I feel like that's kind of steering me away from the original goal of my deck. I just want my deck to be a "don't attack me" style pillowfort geared towards multiplayer. I'm afraid the Enchanted Evening setup will win me one game via blowout then piss everyone off and make me an instant target every time I choose this deck.
Ajani's Chosen I'd like to find a slot for it, but is it worth running when I have no anthems, no equips and no way to boost their attacks? Even though my deck is about 50% enchantments, I don't know if I'll be able to pump out enough tokens to matter. They make good chump blockers but most creatures in EDH trample, fly, slip through via protection or kill you via other means.
I'd really love to have Serra's Sanctum but sadly it's out of my price range.
Yeah, it's the single most expensive card I own. I got one mainly because I absolutely love Enchanted Evening and wanted another excuse to run it, but Serra's Sanctum is generally solid any enchantment-heavy deck. Silly reserved list.
In addition to those, I also have Luminarch Ascension, Sigil of the Empty Throne and Opalescence, but I feel like that's not enough.

In the deck, my wincons (besides the ones you listed) are the following:
Divine Intervention
Springjack Pasture + Mirari's Wake (infinite 1/2 Sheeps)
Blind Obedience (extort)
I guess enchanted evening and Aura shards'll get a table to scoop when Derevi loop infinitely can destroy every permanent you don't own (at instant speed).
How does Springjack and Wake make infinite tokens?

Enchanted Evening plus Serra's Sanctum plus Sacred Mesa or what have you.

Barrin, Master Wizard is a solid way to sac any sort of permanent. Dispersing Orb is even more flexible but awfully expensive.

As for actual wincons: Sacred Mesa can end games on it's own, and if you get it and Earthcraft with Mirari's Wake, Wild Growth or any similar card it goes infinite.
Omniscience is already strong and searchable with Academy Rector, so adding Labman will leave you with a nice alt-wincon.

Eye of the Storm + Knowledge Exploitation let's you cast all instants/sorceries out of your opponents decks several times.
