I am making a weird edh deck and I want to use a bunch of coin flip cards. Just a deck that is random and fun and out of the box. But most of the creatures with that effect causes you to sac them if you lose a coin flip. So is there anyway to stop yourself from sacrificing them because of their ability?
Aside from those effects, not sure if any other cards straight up stop sacrificing. Though, depending on your colors, maybe you could just recur the creatures in question? Depends on what you want to do with the deck, I suppose.
You can't sacrifice what you do not control. So you could give away the permanent with the ability via Bazaar Trader or Zedruu the Greathearted, then take control back with Homeward Path or by flickering/bouncing/etc. the permanent after the coin flip.
Of course, you want to tip the scales in your favor with Krark's Thumb. Maybe copy it with Sculpting Steel and other artifact clones to increase your chances of winning the flip even more.

As such, you wouldn't know whether or not to donate a card with Bazaar Trader until after the coin flip has occurred. By that point, it's too late. You wouldn't be able to donate the card to prevent the sacrifice.

No, protection will not save you from sacrifice effects.

Okay so last question lol, if I gave myself shroud with a card like True Believer than would that prevent the sacrifice?
As mentioned above, no. This won't work. If mitigating a sacrifice effect was that easy, someone would have already suggested it. You're really just limited to Assault Suit if you want to prevent your own sacrifice effects.

The ability is already on the stack and doesn't care about the control change, it will still resolve and do its thing. That's why the coin flip being part of the effect and not the cost is actually important, this won't work if the flip is in the cost.

Assault Suit makes it so you can't sacrifice the equipped creature, but that's about it.
Sigarda, Host of Herons and Tajuru Preserver, but neither protects from your own effects.
