So I'm making a deck where I have spells like Satyr's Cunning that create tokens. I then sack them with Transmogrify to cheat out a big scary creature to slaughter them.
What is the biggest, most overpowered tank in your opinion? Creatures whose power comes with a cast trigger don't work as well, but ETB triggers work just fine.

Imo the scariest are typically the enablers that limit interaction. For example a Master Transmuter is terrifying if it doesn't have summoning sickness and the opponent has multiple cards in hand.
What you're describing although would likely fall in a category of hard-to-deal with threats. Old Eldrazi titans are typical, indestructible + trample on blightsteel colossus are good for surviving various removal, void winnower is good at stopping half(ish) of the board wipes and removal. If your grabbing multiple creatures with one spell (like with mass polymorph/indomitable creativity) then haste enablers like dragonlord kolaghan are good.

Could even run a Atla Palani, Nest Tender and only a single worldspine wurm. Just constantly sacrifice it in response to an egg dying, and you’ll make a constant stream of beefy wurms!
I can imagine it feeling somewhat boring to play after a while.
Alternatively Precursor Golem could be cute. Or a whole herd of apex altisaur entering the battlefield could be hilarious.Hydra Omnivore sits squarely in the realm of "more cute than good", but it could also be very fun.

I'm not sure yet. It'd definitely be red, but I'll figure out what commander to use once I know the creatures I'm running so I can match the color identity well. So just any big creature will work.

Blue will give you additional polymorph effects, as well as so additional token producers. Green will likely give you some of the better Big Scary Creatures, as well as the ramp to cast them should you accidentally draw them. Black has some powerful creatures as well, though they usually scream more "Combo!" Black also gives you good rez effects that works with big creatures, as well as discard outlets. White will give you powerful recursion and protection options, as well as prime removal.
Here's a few ideas that jump immediately to mind, I'll try and keep them by color, with red first.
Token Makers
Goblin Slide - probably a good token maker for this idea.
Etali, Primal Storm - While not huge in his own right, Etali can certainly take over a game with insane advantage. Getting him out early via poly would be a massive play.
Avatar of Slaughter - A bit risky perhaps, but is certainly a go big or go home card.
Drakuseth, Maw of Flames - Big flyer that locks down things, or just does more face melty damage.
Balthor the Defiled - If you're running black and red, you may want a slot in your deck for him. Quick button to return a massive army of giant scary things to play.
