So I played a game recently where I had Progenitor Mimic on the field as a copy of Springbloom Druid. Since at the beginning of my upkeep I’d be getting a new Druid into play I’d have to sac a land and get two tapped into play, would I be able to tap a land and float a mana before I had to sac it.
You can. When the token Springbloom Druid ETB it will trigger. When that triggers you can tap a land for mana and allow the triggered ability to begin to resolve. At that point you may sacrifice a land (including what you just tapped) and search your library for two more lands.
Like genini2 said, you can but it might not have the result you want. If you tap for mana before you sack the land during your upkeep, you must spend that mana before the upkeep ends or it will disappear.in other words, you won't be able to tap the sac'ed land and float that mana over to your main phase to spend.
Floating mana disappears at the end of each phase and step.
