For those of us that own Vintage/ Legacy Cubes, which commander (edh or cedh) could we build with relatively easily using our cube - potentially removing removing 100 cards from our cube without needing to purchase too many commander staples.

Before that question can be answered, you need to know what their playstyle/meta is like. Because if you build cEDH and then go pubstomp a casual group, everyone is going to hate you. And if you build far under their group, no one will enjoy the game either.
i know this is an older thread but if anyone is in the same boat i'd recommend buying a decent precon commander deck, playing it with the new group and upgrade the precon by buying singles (or pull from your cube or existing collection) if it turns out to be underpowered (probably will) vs the other 3. i saw some of the decks going for $10 online the other day. i think all of them have a sol ring...
there are a few other cards in each precon that you can use for other commander decks you piece together in the future. you can separate some of those lands and artifacts from a precon into a separate small deck box or your token box and leave a note in each commander deck reading "add: sol ring, command tower, arcane signet etc". you can reach into the separate "commander essentials" deck box and finish the deck in a minute or less if you want to share frequently used cards among decks and be frugal.
