Back to the actual card, has anyone run him yet, and if so, what were your results? It's pretty obvious that I don't think he's nearly good enough, but it is a very cool card so I wouldn't mind being proven wrong.
Got to try him out, and was pretty impressed; my opinion of him went up quite a bit. Not quite Karn (few things are) in my opinion, but my friend who drafted said he'd rank him pretty high up there. A huge threat vs other decks; stabilizes the board incredibly well and deals with most annoying threats (creatures/PWs) pretty easily and could take over a game pretty well. 3/3s having deathtouch was pretty relevant too.

Wondering if anyone has any data on this guy in an unpowered list. We've had it show up in 3 drafts so far. In main decks 2 out of the 3 times. In my GB midrange build it felt a little too slow, not a lot of fast mana. Only cast him once where he was win more, although Karn Liberated would have been very similar in that one game. I'm wondering if he is just too expensive for unpowered. He replaced Vraska the Unseen in my list.
I was hopeful about this card when it first came out, but it has nowhere near the impact of a karn liberated or Ugin, the spirit dragon, as well as being in a rather stacked guild. :/.
It is still in my cube for now, but I'm also disapointed about 1) being underdraft and 2) seeing it underperform when it does get finally played.
Garruk Apex Predator didn't provide all the good stuff that a 7CC card should bring to the table. At least, he can defend itself, but his loyalty count after doing is so small that he feels kind of weak. And a 3/3 deathtouch beast or a half Dreadbore isn't enough for a 7 mana spell. I also think he should have more loyalty counter and a bigger +X ability much more like the way Karn is craft.
Just this past weekend I had a player comment on how awesome Garruk, Apex Predator was. Granted he did answer an opposing Karn Liberated, but I think that counts for being awesome. He's been in for nearly a year now and I've not been disappointed to have him topping out my more controlling rock lists. He's also a house in four/five color 'walkers.
I had him in the cube for awhile and he didn't dissapoint that much he was just the least impressive G/B card when I decided to go back through and review my card choices.
I like Garruk, but the competition is just so fierce. I think it could've been printed as a mono black card, with maybe some slight tweaks to the ultimate's text. Would've been a cool MBC finisher with a 5BB or 4BBB cost.

There's been a lot of cubeable 6-cmc cards this year, and I let my curve go into free fall over the past 6 months just to see how high I can push the limit of my curve. Dialed back since testing ELD. Garruk rubs shoulders with a lot of other value 6-cmc value cards, especially other recent printings like Liliana, Dreadhorde General and Ugin, the Ineffable. I ultimately decided I wanted Abrupt Decay back in my cube over Garruk since we've also gotten a lot of powerhouse 3-cmc cards over the past couple of years, especially in the form of planeswalkers.
Sure, but dreadbore is way more efficient.
