Journey to Nowhere would be a great inclusion. It functions like a baby Oblivion Ring, only being able to remove creatures but doing it for one less.
Counterspell is awesome and you can have your variety of styles to choose, from .50 to ~$60. Hard counters are super value, and UU is pretty cheap yet still fair. It's an iconic card as well, which for me personally is part of the wide appeal of cube--going throughout the history of the game, finding all the cards with the best synergies and power levels, and putting them into a draft format. It's awesome!
Also, if you ever get Planeswalkers, Magical Hacker is cool. You like uncards so that isn't an issue, and it turns all your PWs' ultimates on. Pretty insane.
(Just checked to see if you run Symbol Status after that, and I noticed you have Punishing Fire in your green spells section.)
Firebolt is a great value spell for read. In one card you have two shocks, which is what your red deck wants. Early shocks, play out the game, and if you flood out a little bit you can cast it from your grave yard for that potentially important or even lethal last two damage.
I like Crystal Ball in here. It's tough to say how fast or slow this cube is as I'm not too good at evaluating that type of stuff in a glance, but if your games are more slow than fast then Crystal Ball will be able to dig for some cards. It has no real impact on the board, but if you have the time it will fix your draws and that in turn will improve your board state.
You could up your list to include a lot of other cheap cards to 360; that way if you did get 8 people you'd have a full draft set.

O-Ring outclasses Journey, like gold outclasses silver--O-Ring may be better, but Journey still kicks serious ass. I mean, if people include it in their powered cubes, then it's definitely worth a spot in a peasant cube.

I didn't check your list that thoroughly, so you're probably fine without the tag. If you're cool with non-modern cards and want some counterspells that won't make your players upset, you might try Memory Lapse and Arcane Denial. Neither feels quite as mean as a pure hard counter.
I strongly suggest you exclude pure color hosers like Flashfreeze. I don't think cubes should have strictly sideboard cards in them. The same is true for Ancient Grudge; if you want artifact removal, play cards that are useful even when your opponent doesn't have any artifacts in play (Torch Fiend, for example). If you won't use actual counterspells, then I suggest Remand or Memory Lapse (though I think you ought to reconsider your stance).
Also, I'm going to deliver the obligatory multicolor complaint:

I think, after playing it, that a cube without rares comes closest to actual drafting. I just wish I had the resources to make a powered cube, more for the laughs than the actual fun. I agree this is more fun and arguably more skill intensive. Its not true disdain! Sorry for making it seem that way! I am looking forward to perfecting my c/ube with fervent excitement.

It should support aggro and control strategies in any colour combination. I want the possibility of mono-colored decks and decent token production. And it is drafted Rochester style only, so cards that do well in that social environment, if there are any, should be included as well.
To start, you've given too much credence to running full cycles.
But there are a lot of cards that people wouldn't want to play or are actually deceiving you into thinking that theyre good.
The "blades" for example will almost never be 3/2s. These cards are no good.
The landcyclers are very spread out in regards to power level and a good example as one shouldn't run full cycles. Pale recluse is by Far the most playable one. The other ones range from completely replaceable to downright awful (jhessian zombies).
Bloodbraid elf = obviously good and Wall of denial is also good, but the other three don't have good arguments as for why they should be basically the lone representatives of their color scheme. Ribbons of night is often considered the best UB card in our cubes, and psychatog is far more interesting as well. Murderous redcap is easily #1 on the rakdos rankings. If for some reason you have an issue with it being hybrid Bit blast isn't so bad because it's at the very least an attractive card. I don't play bit blast, but since your multicolor section is so small I suppose there is more incentive to play flashier cards.
Sigil captain is extreeeeemly hit or miss. It's the definition of a swingy card, though I suppose you might not mind. Kitchen finks is the all-star here, but again if for some reason you don't want a hybrid card here Enlisted wurm, qasali pridemage and Juniper Order ranger each fit the bill for an appealing, strong card in a lone slot.
I do not suggest running Behemoth Sledge because it has a tendency to win games that players have no business of winning.

Also, I'm going to deliver the obligatory multicolor complaint: You have Loam Lion in your white section, despite the fact that the only decks that will play it are GW. Same goes for Mystical Teachings, Strangling Soot, Tin Street Hooligan and Ancient Grudge.
While we're on the topic, your multicolor section seems...haphazard.
