I am not quite understanding the value of Sun Titan returning Bazaar over sphinx. Sphinx is draw 3 while titan is draw 2. Is it the additional return of bloodghasts that make it worthwhile?
basic idea behind this is to win asap. this deck wins every preboard game turn 2, no questions asked(barring of main decked grave hate)
basic idea:
mull into bazaar, discard dredgers
bazaar, play land, bring back some ghasts, return fatesticher, untap bazaar, sac sticher to therapy, bazaar again, dread return for
sphinx> dredge rest of deck in of zealot or titan> bring back bazaar and ghasts, dredge deck, dread return again.

basically, its just the new choice as the third target. (iona, Terrastadon, Angel of dispair, and now Sun titan and a while back sadistic hypnotist which is probably still viable)
when it first came out it was recommended for dredge but up until recently it had yet to see play ut i have seen it showing up a few places recently.
basically the thirdtarget is there to disrupt your opponent and stop them from winning the next turn when you don't have enough bridges or spare creatures to generate the zombies needed to win. usually it doesn't come to that(i used to Dreturn iona like 1/35 games)
rather than blow stuff up or paralyze a color, sun titan makes you just win right there and not worry about loosing.
its largely irrelevant to the deck as a whole since game 1 you almost always win, and game 2-3 if that 3rd target is relevant, you probably sideboarded in the one that is specifically relevant to that matchup(ie terrastado vs stax)

I think in answer to the OP's question, yes the Sun Titan bringing back the Bazaar and the triggers for the ghasts may be more important then the extra draw, remember that the Fatestichers can turn a Bazaar into more draws/dredges then the Sphinx. Typically Dredge wins 95% of game 1, it's in rounds 2 & 3 where people play Bazaar hate that the Titan shines, able to get your whole library in the graveyard in one turn.
Titan can also recur sideboard cards (if you are cards like Seal of Primordium, Tormod's Crypt or Relic of Progenitus - none are listed in the decklist in the second post, but just for reference) Additionally the Titan can return LED (if your build plays one), Narco or other blown up lands.

returning bazaar can get you landfall triggers.
using the new ghasts and bazaar and use therapy/ dread return to reanimate the titan again getting something like more bazaars.
typically this scenario is "win more", but that's a current sentiment towards any dread return package and why all European lists, and many american ones have cut the return.
the real appeal of the sun titan package is returning LED or Black lotus to unearth some fatestitchers to re-bazaar into more fatestitchers to win turn 2. again this is only good in a race scenario and is typically still sb'd out for game 2-3.
I've never seen a modern winning dredge list sb any cards like seal, or tormod's crypt. No good list will ever run relic, it is symmetrical.
