If I use Delina, Wild Mage's effect to copy a Mimic with Xorn on the battlefield, will I get an additional Mimic? If so, then that interaction should work also with Academy Manufactor somehow. I'm just thinking about weird stuff

I think you're thinking too big - assuming we are talking edh - it is like a second veyran/ naban, dean of iteration - all your silly triggers are tripled. And for modern - well, I guess we just cry that monastery swiftspear is a monk. soul-scar mage dreadhorde arcanist and clever lumimancer are probably enough though - and this gal is just silly in multiples.
Sure there's a lot of overlap with Veyran and others, but I liked the synergy with Niv Mizzet here especially, because Niv has two triggers, and the second triggers of the first, so you'll get 4 damage out of each instant or sorcery cast, instead of 1.
if you have both Veyran, Voice of Duality and Pyromancer's Goggles on the battlefield, do you get two copies for red instants and sorceries cast with the Goggles' mana or not? My instinct say no, because it's not a cast trigger, but a 'spend mana' trigger, but I haven't found a definite answer anywhere so far. Thank you for your help.

5 different options, you can either choose them or not -> 2 to the power of 5 = 32 and -1 because you have to choose at least one, not choosing any options is not allowed, so 31 options.
Can i order the trigger as i want? Can i copy my creature first and the return it to my hand?
This isn’t the rulings thread so I don’t want to get in trouble for responding, but no. All targets must be selected when you put the spell on the stack, so your token won’t be on the field. And the abilities will happen in the order printed on the card.

I also like the fact that if you have an Eternal Witness or Archaeomancer on the field, you basically have a counterspell that recurs itself and draws you a card.
You choose on resolution, so sometimes 0 might be a sensible option, e.g. when the opponent sacs all his creatures in response.
