I think the reason it is not enforced (and I have seen it not be enforced at GP's while judges are looking on), is that the rule is in their only to show that caution must be used to sufficiently randomize an opponents deck if you feel they have not randomized it themselves. Having the opponent shuffle again after each player adds a lot of time to the match and especially in a format with fetch lands on both sides of the table can make matches go over time and end in more draws.
from the player's point of view (It's my primary deck), it's not that hard to beat, but you can get into situations where each player is waiting for the other to make a move..the neat thing about the deck is that you don't have to just jam all your creatures and hope for the best, since almost all of the creatures have haste and can win out of nowhere. It plays like a combo deck more than a straight aggro deck. If you are worried about it some of the best answers are Surge of Righteousness and Ultimate Price. Valorous stance is not a very good answer because sometimes I go Abbot of Keral Keep into Titan's Strength or Temur Battle Rage
I would choose Origins. It has simple mechanics and if you end up getting more interested in getting back into the game and say playing at an FnM, you will have cards that are going to be legal in standard, whereas the cards in Theros will only be legal for a month.
I have played against many pro players, GerryT, BBD, Shaheen,Reid Duke and tons of SCG grinders. Also met Patrick Chapin. Each one of them was very nice and even when I won the match, they were a good sport about it.

You are correct, Until end of turn only implies creatures that were already in play when it resolves.
